Vegetarian Chilli Con Carne

Ingredients :

        ⁃ Quorn mince

        ⁃ Onion

        ⁃ Red pepper

        ⁃ Kidney beans

        ⁃ Chopped tinned tomatoes

        ⁃ 2 cloves crushed garlic

        ⁃ Coriander

        ⁃ 1 tsp chilli powder

        ⁃ 1/2 tsp paprika

        ⁃ 1 tsp ground cumin

        ⁃ Chopped fresh or frozen coriander

        ⁃ Basmati or whole grain rice

Method :

– heat the pan with low fat cooking spray, add the chopped onions, once they start to brown, add in the chopped pepper.

– after a few minutes add the garlic & spices. Throw in the whole tin of chopped tomatoes, drain the kidney beans & add this in also.

– Allow to simmer before adding in the quorn mince. Allow to cook for 10minutes and mix in the chopped coriander before you serve with a small side of rice.
