TK’s COCONUT CURRY

Check this little creamy delight out…tasty, flavoursome, and super healthy…and it’s filled with fresh garlic & ginger, great for keeping them colds away due to its immunity boosting properties!!🔥🔥🔥

Ingredients:

  • lean chicken breast
  • Low fat coconut milk
  • Peppers
  • Onion
  • Fresh or frozen Ginger
  • Fresh or frozen Garlic
  • Curry powder
  • Chilli powder (optional)
  • Whole grain or basmati rice
  • Coriander (optional)

Method:

  • Using fry light, sauté the onion in a wok with a pinch of ginger & garlic
  • Cut the chicken into chunks & add to the pan. Once the chicken begins to cook. Add the chopped peppers & 3 tbsp of curry powder
  • Once the chicken is cooked through add a full can of the low fat coconut milk. Let this simmer for 5-10 mins for the flavours to come out. If you like a hot curry you can add a tsp of chilli powder.
  • Serve with a small helping of rice & garnish with the coriander
